“Anchovy drippings” is a fish sauce made from anchovies from the small fishing village of Cetara, Campania. The sauce is a transparent, amber-coloured liquid, produced by fermenting anchovies in brine. Taste it seasoned with fresh herbs such as parsley, garlic, paprika and added to extra virgin olive oil as a dressing for spaghetti or linguine.
