Baby Butter Lima Beans are as the name says a baby variety of lima bean, about 1/2 inch long, with a thin, yellowish-white skin and a creamy texture. Sometimes called “sieva beans,” these tasty little beans are a popular ingredient in Southern cooking, especially the classic succotash.
