Dorothea, named after Van Dijk’s mother, was created at the request of chef Cas Spijkars, aiming to win the annual Dutch “Most Unusual Food” award. They experimented with goat cheese and potato skins, staples in Dutch cuisine. After refining the recipe with basil oil, coriander oil, and chopped onion, they won the award.Only 4,000 wheels are made yearly, each aged for over 60 days, offering a nutty flavor, firm texture, and a fresh outdoor aroma.Made from pasteurized goat’s milk, aged for 60 days.
